The Maker Hotel Debuts SERRE a Seasonal French Dining Experience Redefining Classical Technique Through a Modern Lens

Led by Executive Chef Jonas Offenbach, SERRE reimagines classical French cuisine through a seasonal, modern lens within The Maker Hotel’s iconic glass conservatory, while expanding the property’s culinary program across its Café and Lounge.

SERRE – Hudson, NY The Maker Hotel, a boutique hotel from the co-founders of global beauty sensation Fresh, Lev Glazman and Alina Roytberg, announces a reimagined culinary direction for its signature restaurant under the leadership of new Executive Chef Jonas Offenbach. Introducing SERRE – an ode to classical French technique reimagined through a modern lens and guided by seasonality. SERRE is named after the dining room itself – a glass-encased conservatory layered with greenery, natural light, openness, and a sense of calm. Derived from the French word for “greenhouse,” SERRE is set in the same iconic setting that The Maker is known for, now with a new unforgettable dining experience where refined, seasonal cooking unfolds in an atmosphere that is vibrant and inviting.

Food

SERRE reflects The Maker’s spirit of craftsmanship and artistry, with Chef Jonas bringing a nuanced, detail-oriented, modern approach to dishes rooted in classic French cuisine. Each plate is a study in composition and technique, where thoughtful sourcing, intentional precision, and culinary creativity converge.

Jonas draws on years of working in Michelin-starred kitchens, including Contra, Gramercy Tavern, and Momofuku Ko in New York, to craft dishes that allow pristine ingredients to reach their fullest expression. Through time-honored methods, such as careful reductions, terrines, and delicate sauces, his culinary style is shaped by a balance of precision and creativity, grounded in a deep respect for ingredients. The menu evolves with the seasons, emphasizing clarity of flavor and purposeful composition. The result is dishes that are light, balanced, and refined, with a modern sensibility that highlights the inherent beauty of each element. The experience remains approachable and expressive, inviting guests to engage with the food in a way that feels relaxed, personal, and creatively-driven.

Standout menu items include:

  • Picholine Olive, preserved lemon, toasted fennel, jambon de bayonne
  • Crisp Buckwheat, young kohlrabi, creme fraiche, toasted nori
  • Fried Squash Blossom, shrimp, morel, nasturtium, Thermidor
  • Lamb Chop Crépinette with spring peas, mint, arugula and sauce madere
  • Beef Bavette, with grilled fava beans, three-cornered leeks, and sauce bordelaise

In addition to SERRE, Chef Jonas has launched a new menu at The Maker Café and The Maker Lounge. The Café serves as a community gathering space, offering a daytime menu guided by the same seasonal approach and inspired by modern French cuisine, including baked goods from Bartlett House, an artisanal bakery also founded by Lev Glazman and Alina Roytberg.

Highlights include:

  • Soft scramble with two eggs, crème fraîche, fines herbes, toasted sourdough, and a lightly-dressed green salad
  • Coq Au Vin Pot Pie with red wine braised chicken, lardons, mushrooms, potatoes, and puff pastry
  • Smoked Salmon Tartine with pastrami smoked salmon, capers, pickled red onions, dill, and crème fraîche

The Maker Lounge introduces a newly refreshed food menu that reflects elements of SERRE’s cuisine in a more relaxed, and shareable format, and a beverage menu that includes The Maker’s signature Fragrance Cocktails – drinks inspired by the brand’s own fragrance collection – helmed by Food & Beverage Director Pia Bazzani.

Highlights include:

  • Jambon de Bayonne with picholine olives and preserved lemon
  • Escargot Toast with smoked speck and spinach
  • Japanese Jack Fish, toasted brioche, dried herb tartar sauce

 Together, these spaces extend The Maker’s culinary vision of offering inviting day-to-night destinations for the local community and visiting guests alike.

 

Beverage

The beverage program of SERRE is rooted in a deep respect for the makers behind every bottle, highlighting producers whose work is expressing, honest, and shaped by its distinct destination. Led by Food & Beverage Director Pia Bazzani, the beverage menu and wine list are designed to move in step with the kitchen, with thoughtful selections that complement the menu and evolve throughout the meal. The by-the-glass offerings encourage exploration across courses, while the cocktail program takes a narrative approach, drawing inspiration from literature and the seasons.

A defining element of the cocktail offerings is its focus on martinis – refined, expressive interpretations that showcase both precision and personality. Alongside these, the menu features a broader range of libations, select beers, and spirit-free beverages, ensuring a dynamic and inclusive experience for all guests.

Signature martinis include:

  • Maker Dirty Part Deux – Vodka, whey eau de vie, vermouth, olive brine, Parmigiano crisp
  • Breakfast at Tiffany’s – Hayman’s Vibrant Citrus Gin, Planteray 3-Year Rum, Bartlett House carrot orange blossom jam, sweet potato, lemon
  • Alias – Xoriguer Gin de Mahón, Bordiga Dry Vermouth, soju, pickled shallot

 

Design

The 14,000 square-foot hotel is comprised of three buildings: an 1800’s Carriage House, a Georgian mansion, and a Greek Revival building. Before the hotel opened in 2020, a conservatory was built to connect the three historic buildings and integrate the spaces. The greenhouse, which is now home to Serre, is bordered by glass-ceiling windows, enveloped in layers of greenery. Jewel-toned tapestry upholstery brings colour and pattern into the light-filled space. The conservatory leads outside to a central lush courtyard and a tempting azurite-blue swimming pool. When first designing the conservatory, Lev Glazman & Alina Roytberg drew inspiration from the grand conservatories of Europe. The space is richly layered with antiques, restored objects, an ethereal burlap mural by Michael Allen, and bespoke pieces by Gary Keegan.
